Never dumps RAM memory, ends up having poor performance

I got a decent sized project and as I go through it from the beginning to the end, I notice the program stores all the data in the RAM but never disposes of it. I end up having articy using 2 GB of RAM and the program being extremely choppy.

I don't understand how a big client could use this for their products as I think I barely scratched the surface with mine.

What is happening?

Here's my current workflow which is about half of what I need. As you can notice the RAM is pretty high up. Did not reach 2GB yet as I restarted the program a while ago.
The moment I copy-paste things, I edit text and do usual operations the ram increases little by little while the performance slowly goes down. I got 16GB of DDR and an intel i5 3570k
